The method is pretty simple: rinse the beans and soak them in about two inches of water in a saucepan. Bring the water to a boil, cook the beans for a minute and then remove the pot off the heat. Cover with a lid, soak for an hour and then drain them.

This quick-soak method shortcuts the hours of waiting by first bringing the beans to a boil, then letting them soak in the hot water for about an hour. This doesn't actually cook the beans — they're not ready to eat quite yet — but this puts your beans at the starting line, just as if you'd soaked them overnight.
