1 c. sugar
1/2 c. canola oil spread
1 c. canned pumpkin
2 eggs whites or 1 egg
1 tsp grated orange peel
2 c. Quaker oats (quick or old fashioned, uncooked)
1 c. all purpose flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/2 c. chopped pitted prunes
1/4 c. chopped walnuts

Glaze: 1/2 c. powdered sugar blended with 1 Tbsp orange juice
Directions:
Directions:
Beat sugar and oil spread in large bowl until well blended; add pumpkin, egg and orange peel and beat well.

Add combined oats, flour, cinnamon, baking soda and salt, and stir well.

Fold in prunes and walnuts.

Drop by tablespoonfuls about 2 inches apart onto cookie sheet lightly coated with cooking spray.

Bake at 350 for 11-13 minutes or til lightly browned.

Cool completely and drizzle with glaze in stips
