2-4 Bell Peppers, any colour, cut up into large wedges, rubbed in olive oil
1 Minced Onion
3 Minced Garlic Cloves
2 Chicken Breasts, thinly sliced
1-2 Packages of gnocchi, boiled
1 Bunch of fresh Basil, chopped
1 Cup of Heavy Whipping Cream
1 tbsp Olive oil for pan
1/4 Cup Parmesan cheese
salt and pepper to taste
butter for frying gnocchi

Directions:
Directions:
Put a large pot of water on high to boil. Preheat oven to 450F. Boil gnocchi according to package directions and drain and set aside when done. Roast peppers until slightly charred and set in a blender or food processor and blend until smooth, add the whipping cream and a bit of the basil and set aside. While peppers are roasting, heat olive oil in large pan and sauté onions and garlic with chicken breast until chicken is done. Set aside. When gnocchi is done, sauté it in a good amount of butter until it begins to get a bit golden brown. Now you add the cream/pepper mixture to the chicken and heat through, add parmesan and salt and pepper to taste. Serve gnocchi with a good spoonful or 5 of sauce on top and garnish with more fresh basil.
