1 c buckwheat flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp stevia plus 1 tsp for sauce
1 egg white, beaten
1 c unsweetened rice milk
1 tsp vanilla extract
2 c blackberries

Directions:
Directions:
Heat a nonstop griddle or pan over medium heat. Heat at 6 until very hot. Whisk together the flour, baking powder, cinnamon, and 1/2 tsp stevia. Add the egg white, milk, and vanilla and whisk well. Pour about 1/4 cup of batter onto the hot griddle or pan for each of 4 pancakes and cook until bubbles begin to break on the surface. Flip the pancakes over and cook for about 30 seconds longer or until lightly brown. Meanwhile, heat the blackberries in a saucepan with 1/4 c water and a pinch of stevia. Pour the sauce over pancakes and serve.
