1/2 c. skim milk
1/2 c. non-fat dry milk powder
1/8 tsp. cream of tartar
4. tsp. lemon juice
2 tsp. sugar (optional)
1/2 tsp. vanilla (optional)

Directions:
Directions:
1. Put skim milk into metal bowl, put in freezer about 15 minutes (until in crystal form)
2. Add milk powder, tartar, then whip at high speed until foamy
3. Beat in 1 tsp. lemon juice, and heat until begins to thicken
4. Beat in 1 tsp. lemon juice and sugar until soft peaks form
5. Add remaining lemon juice, heat until stiff peaks form
6. Fold in vanilla
