6 chicken breasts
1/2 tsp. salt
1/8 tsp. pepper
3 Tbsp. brown sugar
1 Tbsp. cornstarch
1/4 tsp. salt
1/8 tsp. ground ginger
1/3 c. orange marmalade
2/3 c. orange juice
1 Tbsp. lemon juice
1 whole orange, thinly sliced, with slices cut in halves

Almond Rice:
2 c. minute rice, or any rice you like
2 Tbsp. butter or margarine
1/4 tsp. salt
1/4 c. almonds
1/4 c. raisins

Directions:

Rub chicken pieces with salt and pepper. Brown in 2 tablespoons of cooking oil. Pour excess fat from pan.
Combine remaining ingredients, except orange slices, and add to chicken. Cover and simmer for about 30 minutes or until chicken is tender.
Add orange slices, simmer 20 minutes longer. Serve with almond rice.
Prepare rice according to package directions, adding butter and salt. Just before serving, stir in almonds and raisins.
