4 cups of flour
1 cup of sugar
1 cup of milk
4 tsp baking powder
1/2 tsp salt
2 eggs
2 tbsp melted butter
1 tsp vanilla
1/2 tsp each of cinnamon and nutmeg
Optional - mix cinnamon with sugar to dip the doughnuts after cooking

Mix all together until a soft dough forms. Cut in half and roll each half to about 1/2 inch thickness. Cut with a doughnut cutter or a large rimmed glass with a shot glass for the doughnut hole. Heat oil in a pot, a wok or a deep fryer. When oil is hot, drop a tiny amount of batter to see if it is ready. The tricky part here is that the oil needs to be hot enough so the doughnuts cook inside but remain crispy but not so hot that they brown too quickly. Drop in a few at a time using a chopstick or tongs to turn the doughnuts so they cook on both sides. A circular crack in the dough along the outside edge means you have a perfect doughnut! Once cooked, place on paper towels to absorb any grease.
