Ingredients: Chopped lettuce - romaine or a mesclun mix work well. Can also be made with baby spinach. Any type of tender steak with salt, pepper or steak spice Options for toppings: roasted red pepper slices, feta cheese chunks, olives, tomato, cukes, red onion, pine nuts, croutons etc. Balsamic vinaigrette (see below)

Directions:Clean and chop romaine lettuce in small pieces or use mesclun mix. Dry well and stack on a wide platter. BBQ or pan fry required amount of steak to medium or as desired. Allow to rest before slicing diagonally into 1/4 in. slices. Place meat on bed of lettuce. Drizzle with balsamic vinaigrette made with balsamic vinegar, olive oil, salt, pepper, dash of lemon juice, tiny bit of honey(if a sweeter vinaigrette is preferred). Shake well, taste and adjust flavouring as needed. Pour over salad. Do not mix. Add preferred toppings. *Can also be made with sliced chicken breast, pork tenderloin, salmon etc.. |

Notes: An easy, fast and impressive meal - good enough for guests but also for a hearty weekday meal. I heap it all on to a nice stainless steel platter with two large serving spoons and pass the platter around. Meat, veggies and extras all in one! (*This is not one of our 'traditional' recipes but it has turned into a favorite - quick and easy!)
