1lb ground bison
1lb ground wild boar
1lb ground venison
1 1/2 lbs ground chuck
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 large onion, chopped
Minced garlic
3 cans diced tomato
1 large can black beans
1 large can dark kidney beans
2 cans ranch style beans
2 8 oz cans tomato paste
2 2 lb Williams Chipotle chili seasoning mix
1 4 lb Williams Original chili seasoning mix
1 tbsp red wine vinegar
2 tbsp Emeril's Essence
1 tbsp garlic salt
3 tbsp crushed black pepper

Directions:

Turn large pan or Dutch oven to medium high heat, add 1 1/2 tbsp extra virgin olive oil. Add onions and bell peppers. Add minced garlic. Mix well. Add in chuck, boar, bison, and venison. Brown well but do not drain. While this is cooking, season with black pepper, Emeril's essence and garlic salt. Mix well. After browning for about 7 minutes, add tomato paste and continue to brown. Mix in red wine vinegar. Add tomatoes and simmer for 7-10 minutes. Add chili seasoning. Add beans, do not drain. Reduce heat and simmer for as long as desired; the longer the better (1-4 hours).
