10 chicken thighs, remove fat and skin
2 yellow onions, chopped
5 garlic cloves, crushed
2 celery stalks, chopped
1/3 green bell pepper, chopped
1 can whole tomatoes (14 oz.)
1 can water (14 oz.)
2 tsp. salt
1/2 tsp. pepper
1 & 1/2 tsp. cummin
rice

Directions:
Directions:
1. In a blender mix: tomatoes, water, salt/pepper, cummin
2. Brown chicken thighs in olive oil, set aside
3. Saute onions, garlic until transparent and brown
4. Add celery, bell pepper, saute 3 minutes
5. Return chicken to pan with above
6. Pour blender mix over chicken, cover, simmer 45-50 minutes
7. Serve over rice (brown rice for added flavor & nutrition)
