2 chicken breasts
1 tbsp. minced onion
1 & 1/2 tsp. mustard seed, crushed (optional)
1/4 c. white wine (optional)
1/4 c. chicken broth (1/2 c., if no wine)
1/4 c. milk
1 tbsp. Dijon mustard
1 tbsp. chopped parsley
rice or noodles

1. Cut chicken into 1 inch chunks, season with salt & pepper, dust with flour
2. Saute chicken until golden brown (5 minutes), set aside
3. Add onion to pan, saute 1 minute
4. Add wine, stock, and cook until liquid is reduced to 1/4 c.
5. Return chicken to pan, add milk and mustard
6. Cook for 3 minutes, stirring until thickened
7. Sprinkle parsley, and serve over rice or noodles
