3 large Pippin or Granny Smith Apples
2 & 1/2 tbsp. sugar
1/4 c. melted butter
1/4 c. stick butter
2 & 1/2 c. dry white wine (chardonnay)
1 & 1/4 c. brandy
1 tsp. ground cinnamon
salt & pepper
6 pork chops, 1 inch thick each
4 tbsp. flour
1 tsp. beef bouillon
Noodles or rice

1. Peel, core, halve apples, then slice halved apples into 5/6 slices, but don't slice all the way through
2. Grease shallow baking dish, dust it with 1/2 tbsp. sugar
3. Place apples halves in dish & pour 1/4 c. melted butter, 1/2 c. wine, 1/4 c. brandy over apples.
4. Sprinkles with remaining sugar & cinnamon
5. Broil 6-8 inches from flame, for 25 minutes, baste often
6. Salt & pepper chops, brown on both sides 3-5 minutes
7. Add 1 c. wine, 1/2 brandy, boil, then simmer for 20 minutes, covered
8. Remove chops, keep warm
9. Add 1/4 c. stick butter, stir to loosen any particles
10. Mix remaining 1 c. wine, 1/2 c. brandy with 4 tbsp. flour, add to pan, add bouillon
11. Simmer 5 minutes, stirring constantly
12. To serve: put chop on plate, top with apple half, pour sauce over all
13. Serve over noodles or rice
