2 lbs ground beef
4 medium Bell peppers
1 onion
2 C. long grain uncooked rice
7 oz. Cheddar cheese

Directions:
Directions:
Cut tops off peppers and remove seeds
Par boil peppers and cover
Brown meat
Add chopped onion
Add chopped pepper tops

Steam
Add uncooked rice and cubed cheese to meat mixture
Cook until cheese is melted.
Fill each pepper with 1/5 par boiled water
Fill pepper 3/5 full with meat/rice mixture
Bake 350° for one hour (covered with foil)
