Oatmeal Flour:
2 cups whole oats
1/2 tbsp. baking soda
1/2 tsp. salt
1/3 cup instant nonfat powdered milk
1 tbsp. cinnamon
1 tbsp. apple pie spice

Muffins:
3 eggs
1/2 cup brown sugar
1 tbsp. vanilla
1/3 cup vegetable oil
1 1/2 cup whole oats

Optional: raisins, nuts, bananas, pineapple, etc.

Oatmeal Flour:
Combine all ingredients in a food processor and grind until powdery (the consistency of flour).

Muffins:
1. Preheat oven to 350.
2. In a large bowl, mix eggs, brown sugar, vanilla and oil together.
3. Add the oatmeal flour to the wet ingredient in the mixing bowl and mix well.
4. Add 1 1/2 cup of whole oats and any of the optional ingredients and combine.
5. Bake for 10-15 minutes.
