3 T. unsalted butter
2 cups flour
1/4 cup granulated sugar
2 1/2 t. baking powder
1/2 t. baking soda
1/2 t. kosher salt
2 c. buttermilk
2 large eggs

Directions:
Directions:
Melt the butter in a small bowl in the microwave or in a small saucepan on the stove and set aside to cool briefly.

In a large bowl, whisk the flour, sugar, baking powder, baking soda and salt. In a medium bowl, whisk the buttermilk and eggs.

Pour the wet ingredients into the dry ingredients. Whisk gently until the dry ingredients are almost incorporated, but stop before the batter is evenly moistened. Add the cooled melted butter and mix just until the batter is evenly moistened (there will be lumps). Let the batter rest while you heat griddle.

Heat a griddle or skillet over medium heat or set electric griddle to 375º until drops of water dance when dropped on surface. Lightly oil the griddle.

Pour 1/4 cup or more of the batter for each pancake, spacing 1 inch apart. Cook until bubbles rise to the surface and the edges look dry, 1 to 2 minutes. Check the underside of each pancake to make sure it's nicely browned; then flip. Cook until the second side is nicely brown about 1 minute more. . Repeat the process.

These are the best tasting pancakes ever. Dad loves them. In place of sugar I use Splenda, which works great. You can also add fruit like blueberries to the batter. They come out light and fluffy every time. This is the only pancake recipe I use now. It is oh so good.
