2 MEDIUM ONIONS PEELED AND QUARTERED
1 C WATER
8 C CHICKEN BROTH
2 MEDIUM CARROTS CUT IN CHUNKS
2 MEDIUM CELERY STALKS (WITH LEAVES) CUT IN CHUNKS
4 SPRIGS FRESH THYME OR 1 TBSP DRIED
3/4C FLOUR
2 TBSP BUTTER
1 TSP PEPPER

PREHEAT OVEN 400.IN A LARGE ROASTING PAN ADD WINGS & ONIONS. ROAST 1 1/2 HR UNTIL WINGS BROWNED. PLACE WINGS IN LARGE STOCK POT. ADD WATER TO ROASTING PAN SCRAPING UP BROWN BITS. ADD TO STOCK POT BROTH,CARROTS,CELERY & THYME. BRING TO BOIL REDUCE HEAT AND SIMMER 1 1/2 HRS.
REMOVE WINGS (SAVE MEAT FOR ANOTHER USE) STRAIN STOCK DISCARD VEGGIES. WHISK IN FLOUR WITH 2 C BROTH UNTIL BLENDED. BRING REMAINING BROTH TO GENTLE BROTH ADD FLOUR MIXTURE. BOIL 4 TO 5 MINUTES UNTIL THICKENED. STIR IN BUTTER & PEPPER
CAN REFRIGERATE 1 WEEK OR FREEZE 1 MONTH
