"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Melt chocolate in top of a double boiler over very hot water. Cool slightly. In a bowl combine butter and sugar. Beat in egg yolks one at a time. Stir in cooled chocolate & vanilla. Chill. Shape into balls and roll in whatever toppings you like. Keep chilled.

Personal Notes:
Your hands are going to get messy. These take a long time because they melt fast. Roll a few then return bowl to fridge. I liked to roll them in tiny chocolate chips, finely chopped nuts, chocolate sprinkles, colored sugar & shaved bits of white chocolate.
