1 lb Baking Potatoes
1 (16 oz) container sour cream
1 (8 oz) package cream cheese, softened
1 (8 oz) package sharp cheddar cheese, shredded
1/2 c milk
1 stick butter, softened
1/2 c bacon, cooked & crumbled or
1/2 c bacon bits

Directions:
Directions:
Fill large pot 1/2 way with water, cover and set on high. Peel & cut potatoes into small chunks. Add to boiling water and cook approximately 10 minutes or until fork tender. Drain, place potatoes into an oven safe baking dish. Mash potatoes, & butter, adding the milk a little at a time until the potatoes reach a creamy consistency. Add sour cream and cream cheese and mix again until creamy. Top with cheddar cheese. Bake @ 350 until cheese melts, add bacon and cook for additional 2 minutes.

When mashing the potates I have found that using an electric mixer is the easiest way to get a nice creamy consistency.

Be sure not to undercook the potatoes.
