1 1/2 cups mayonnaise
1 cup raisins
1 cup salted peanuts
1 cup mango chutney, cut into slivers
1 cup flaked coconut
2 lbs. cooked chicken meat, diced coarsely
2 cups diagonally sliced bananas
Salt & pepper to taste
Salad greens
Avocado slices
Additional sliced bananas
Lemon juice

Mix together the mayonnaise, raisins, peanuts, chutney and coconut and chicken. Season with salt & pepper.

Mound into a large salad bowl or on a platter lined with lettuce leaves. Garnish with slices of avocado and banana, which you have dipped in lemon juice.

This unusual chicken salad is rich with chicken meat and curry condiments. Mound the salad on a big bed of salad greens and garnish with slices of avocado. To plump raisins, let them stand in white wine a few hours before making the salad.
