8 lasagna noodles (about 6 oz)
3/4 lb ground beef or ground turkey
1 Tbsp olive oil
1/2 medium onion, diced
1/2 green bell pepper
6 cloves of garlic, minced
1 15 oz can of Hunts tomato sauce
1 small can of Hunts tomato paste
1 14.5 oz can of Hunts diced tomatoes
1/4 cup diced fresh basil
1 Tbsp diced fresh parsley
1 Tsp diced fresh oregano leaves or dried oregano leaves
1 tsp salt
1/2 tsp black pepper
1 large container Ricotta Cheese
3-4 cups shredded or sliced Mozzarella Cheese
1/4 cup shredded Parmesan Cheese

Preheat oven to 350º.
Cook lasagna noodles per package directions
While they are cooking, start sauce.
In large skillet, brown meat, then drain fat and remove meat from pan.
Add 1 Tbsp olive oil and saute onion, bell pepper and garlic just until tender and onions become clear.
Add meat back in.
Add cans of sauce and paste.
Fill the small paste can with water and add.
Add herbs and salt and pepper
Simmer for 20 minutes, stirring occasionally and adding small water if needed.
Your sauce should thicken.
When noodles have cooked, drain.
Spray large casserole dish with cooking spray
Thin the Ricotta cheese with a little milk, so that it spreads easily.
Then you will assemble the lasagna as such:
Put layer of 4 noodles down first, then 1/2 the sauce, then 1/2 of the Ricotta cheese, then enough mozzarella to cover Ricotta (1 1/2 to 2 cups). Repeat. Top last layer of mozzarella with the parmesan.
Bake 30- 40 minutes until cheese is melted and bubbly. Let sit 15 minutes before serving.

This is my own recipe that I arrived at over the years of trying different ingredients in the sauce and different types of cheeses. I do think the Hunts sauce is better than generic brands. Also, using fresh herbs and fresh garlic really adds flavor.
