Top Round Roast
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
2 Tbsp shortening or margarine
Water (1/2 cup to start)
For gravy:
1 cup beef broth
1/2 cup water mixed with 3 Tbsp flour

Melt shortening in deep skillet.
Add roast and season with salt, pepper, and garlic powder
Brown on all sides
Add 1/2 cup of water
Cover and let simmer for at least 4 hours. It is good to let the liquid get low and scrape drippings in pan before adding more water. But do watch it so if it is getting dry, add enough water to keep it from burning or drying out. You are cooking this meat in as little liquid as possible so it is not so much like a traditional pot roast as a roasted roast. Roast is done when it is so tender it falls apart. Remove from pan and keep warm while making gravy in same pan.
For gravy, mix flour in 1/2 cup of cold water. Then add beef broth and flour/water mixture to pan drippings and mix well. Simmer and season as desired with salt and pepper.

Mom always made this for my dad. Mom's roast beef with mashed potatoes and gravy is really a good comfort food on a cold winter day.
