Dough:
1 Stick butter or margarine, at room temp
1 3oz package of cream cheese, at room temp
1 C flour
Filling:
6 oz Cream cheese, at room temp
1/2 Cup sugar
1 Egg, beaten
1/2 teas Vanilla
1/2 Cup crushed pineapple, drained
Optional: powdered sugar

Directions:
Combine butter and cream cheese. Mix well with flour to form pastry dough. Shape into walnut-sized balls. (Make smaller balls to get more than 24 pies.) Press the dough into the bottoms of mini-muffin/tartlet cups.
Mix the filling, folding in the pineapple and the vanilla at the end. Fill the muffin cups 3/4 full.
Bake for 20 minutes in a 350º oven.
Sprinkle the tops with powdered sugar, if desired. Enjoy!
