Marinade:
2 tbsp cornstarch
1 tbsp soy sauce
1lb boneless, skinless chicken

Sauce:
2 tsp cornstarch
3 tbsp soy sauce
1/4 cup sugar
3/4 tsp grated lemon peel
2 tbsp lemon juice
1/4 cup water

2 tbsp vegetable oil
1 bunch green onions

Assorted vegetables of your choice (chopped broccoli, carrots, peppers, beans)

Directions:

Marinade: Cut chicken into 1-inch pieces; stir into mixture of cornstarch and soy sauce. Let stand for 30 minutes. Note: Marinade mixture will be stiff - allow juices in the chicken to soften the cornstarch mixture, but do not add more liquid or the chicken won't brown.

Combine sauce ingredients in a bowl and stir until blended. Set aside.

Heat vegetable oil over high heat in a wok or large saute pan. Add chicken and green onions and stir fry until chicken browns on all sides. Remove chicken from the pan.
Reduce heat to medium high and add chopped vegetables to pan. Add a few tablespoons of water and cook for 4 to 5 minutes. Pour sauce into pan and return green onions and chicken to the pan. Reduce heat and cook until vegetables are cooked (approx. 4-5 minutes).
*Add a few tablespoons of water to the pan if sauce becomes too thick before vegetables are cooked.
Serve over rice.
