Cinnamon Roasted Almonds Recipe

1 egg white
1 tsp. cold water
4 cups whole almonds
½ cup white sugar
¼ tsp. salt
½ tsp. ground cinnamon

Directions:
Directions:
Preheat oven to 250 degrees. Lightly grease a 10x15” jellyroll pan (I used Pam). Lightly beat the egg white; add water and beat until frothy but not stiff. Add the nuts and stir until well coated. Mix the sugar, salt and cinnamon and sprinkle over the nuts. Toss to coat. Spread evenly on the prepared pan. Bake for 1 hour in preheated oven, stirring occasionally (every 15 minutes), until golden. Allow to cool. Store nuts in airtight containers.

NOTE: You can also substitute pecans for the almonds. I always make a batch of each.

If I ever decide to go into business for myself, I would probably sell these nuts. Everyone loves them. I make MANY batches at Christmas and package up to give away to co-workers. Mom & Dad always get a batch of each in their stocking and I make them some for their work-camping trip out and home every year.
