2 lb Shrimp (peeled and deveined)
2 Tbsp Butter
2 Tbsp Jamaican Curry Powder
2 Onions
1 hot Pepper (Jalapeno or Scotch Bonnet)
4 cloves Garlic
1 Tomato
1/2 Sweet Bell Pepper
2 stalks Scallion
1/2 tsp Salt
1/2 tsp Pepper
1/2 cup Water
1 tsp Cornstarch

Directions:
Directions:
Chop Onion, Scallion, Green Pepper, Garlic, Tomato, hot Pepper

Mix Shrimp in a bowl with one Tsbp Curry Powder

Melt Butter in a large pan and add the other Tsbp of Curry Powder and Fry for about 1 minute.

Add all chopped up vegetables, Salt & Pepper Fry for about 5 minutes.

Add Shrimp and simmer for about 5 minutes.

Add 1 tsp Cornstarch mix and add 1/2 cup water and cook for 5 minutes.

Serve hot with Rice and Peas and Salad
