3-4 lb Beef Chuck Roast
3 Chipotles in Adobo Sauce, chopped - you will not need extra sauce
5 cloves Garlic, chopped
1 T. Ground Cumin
3 tsp. Oregano
1/4 t. Ground Cloves
1/2 c. Beef Broth
1/4 c. Apple Cider Vinegar
1/4 c Lime Juice, fresh is best
3 Bay Leaves
Salt
Pepper

For Serving (optional)
Tortillas, flour or corn
Lettuce
Cheese
Sour Cream
Salsa
Guacamole
Rice
Black Beans

Directions:
Directions:
Cut the roast into large chunks, about 6. Season well on all sides with salt and pepper. Place chunks in a heated pan with a small amount oil to sear. After all sides have been seared place in a crockpot. Add the rest of the ingredients and cook on low for 6-8 hours. Remove the meat and bay leaves. Shred the roast and place back in the juice. Serve with rice or on tortillas.
