2 Tbs olive oil
1 lb. lean ground beef
1 small sweet onion, chopped
4-6 garlic cloves, minced or finely chopped
1 can diced tomatoes
1 small can tomato sauce
1 can mushroom stems and pieces (or use fresh mushrooms)
salt and pepper to taste
1/3 cup Italian seasoning (or to taste)
Pasta (spaghetti noodles)

Directions:
Heat olive oil in Dutch oven over medium high heat.
Add chopped onion and garlic, and saute until onions are softened, being careful not to burn the garlic. Reduce heat to medium.
Add ground beef, and cook until no longer pink, breaking into small pieces as it cooks.
Add salt, and pepper
Add the tomatoes, tomato sauce and mushrooms. Stir to combine.
Sprinkle Italian seasoning over the sauce and stir. Bring to a boil.
Cover and simmer for 1 hour, stirring several times.
Remove lid simmer for 15 minutes.
Boil the amount of pasta you need in lightly salted water with 1 tsp olive oil, until al dente (6-8 minutes).
NOTE: The recipe is easily doubled. When I double it, I use 1 lb ground beef, and 1 lb ground Italian sausage.
