4 Potatoes Peeled and Sliced
2 Cups Carrots Peeled and Sliced
2 Cups Green Beans
2 Cups Zucchini Sliced
3 Cloves Garlic Chopped
2 Bunches Green Onions
2 Yellow Onions Sliced
Parsley Chopped
Tomato Sauce or Tomato Paste (small can)
Dried Mint or Oregano
Salt, Pepper, and Onion Powder to Taste
1 Cup Olive Oil
1/2 Cup Water

Directions:
Directions:
This recipe can be customized for any size pan. Begin by placing the potatoes in the roasting pan then adding the remaining ingredients all to taste and season generously. End with a generous dousing of olive oil all over the pan and tomato sauce diluted in water which goes half way up the pan. Bake at 375º until potatoes are very soft and water has evaporated leaving oil. You can add additional oil at the end.

You may need additional tomato sauce if you're making in a pan larger than 9x13.
