1 onion diced
1 jalapeño pepper, diced
1 clove garlic, crushed

ººSimmer for 1 hour and add chicken stock, if needed to thin.

This has always been a breakfast favorite with The Neals. We love to make St. Louis style skillets with Grama Neals Mexican rice on the bottom, the huervos rancheros sauce, and Mexican style shredded cheese on top. Bake at 350 F for 20 minutes or until hot and cheese is melted. Top with 2 fried eggs.
