5 lbs baked potatoes- diced with or without skin

1 lb bacon- cooked crispy and crumbled
1 c shredded cheddar cheese
2 sliced scallions
1 pt sour cream or Greek yogurt

Mix together first 4 ingredients. Stir in sour cream. Garnish with more scallions or chives.
