6 4-oz. boneless chicken breasts
salt & pepper to taste
1 egg
1 cup milk
1/3 cup oil
1 16-oz can artichokes quartered and drained
1 12-oz jar capers drained
16 oz sliced mushrooms sauteed in a little oil

Sauce:
1/2 cup white wine
1/2 quart heavy cream
salt and pepper
1 cup culinary cream
1 Tbsp butter

Directions:
Directions:
Trim excess fat from chicken then salt and pepper to taste. Mix egg and milk in a bowl. Place chicken in egg mixture. In frying pan heat 1/3 cup oil, add chicken searing on each side to seal in juices. Place on baking sheet in 350 degree oven until done. Remove from oven and place single layer of chicken in casserole dish. In a bowl, mix artichokes and capers. Saute mushrooms in a little oil. Add artichoke mixture and heat thoroughly. Pour mixture over chicken in casserole dish.
Sauce:
In saucepan, reduce wine by 1/2 Add heavy cream and butter and heat. Add culinary cream, heat, whip and pour over chicken mixture.
