3 eggs, 3 small potatoes
2 small strips of salt fish
1/4 cup vegetable oil
1 tsp. grated garlic
2 tbsp. curry powder
1 tsp. saffron powder
Dash of cumin
Dash of nutmeg
2 cups water
Salt to taste
Pepper to taste

Directions:
Directions:
Hard boil eggs for about 10 to 15 minutes
Peel and put aside.
Cut up 3 small potatoes and boil for 10 to 15 minutes. drain and cool.
At medium heat, place oil in saucepan, add garlic, then add curry powder, saffron powder, stir for about one minute.
Add eggs to curry mixture, turn for about 3 minutes, add potatoes, stirring constantly.
Add 2 cups of boiling water. Add saltfish, salt, pepper, cumin, nutmeg and a small piece of hot pepper. Cook for about 5 to 7 minutes then cool.
Garnish with parsley.
Serve with rice dish or buttered roti.
