beets (as many as you want)
vinegar
sugar
pickling spice

Directions:
Directions:
Wash beets and cut off just enough of the tops so that you do not cut the beet itself. Place beets in large pot and bring to a boil. Boil until skins begin to peel off. Place beets in cold water and peel off skins. Cap the top and bottom of the beet. If beets are large, cut them up into smaller sections. Place in pot. Add EQUAL amounts of sugar and vinegar. Have enough liquid to cover the tops of the beets. Place 1t of pickling spice in pot and bring to a boil. Have jars washed and ready. Place in jars, cover with rings and lids. Set aside to seal. Always check to make sure they seal.
