"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali
This recipe for Speedy Scalloped Potatoes, by Marion Eglinton, is from The Schuldt Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 med. potatoes 1/4 c. grated Parmesan cheese 3/4 c. milk 1/2 tsp. paprika
Spray a 2 quart casserole with cooking spray. Thinly slice the potatoes. Layer the potato slices and cheese. Pour milk (I use non-fat) over the potatoes. Sprinkle with paprika. Cover with plastic wrap. Poke vent holes. Microwave on high for 10 to 12 minutes, rotating the dish 3 times.
