4 plum tomatoes, seeded and chopped
1/2 c. shredded parmesan cheese
1/4 c. minced fresh basil
3 Tbsp. olive oil
2 Tbsp. minced fresh parsely
2 cloves garlic, minced
2 tsp. balsamic vinegar
1/8 tsp. salt
1/8 tsp. pepper
1/8 tsp. crushed red pepper flakes
1 French bread baguette (10 1/2 oz) cut into 1/2" slices
1/4 c. butter
8 oz. mozzarella cheese, sliced

Directions:
Directions:
In small bowl, combine first 10 ingredients.

Spread each bread slice with butter, top each with a cheese slice. Place on a baking sheet. Broil 3-4" from the heat for 3-5 minutes or until cheese is melted.

With a slotted spoon, top each slice with 1 Tbsp. tomato mixture.
