3-4 medium zucchini
1 lg. or 2 sm. onion
1/2 tsp. oregano
5 large eggs
salt and pepper to taste

Directions:
Directions:
Slice onion in thin slices and cook in about 2 tbsp. olive oil. When limp and starting to brown add sliced zucchini and cook onion until done. Remove zucchini and onions from frying pan. Slightly beat the eggs and then add zucchini and onions. When cooled a little add oregano, salt and pepper to taste. If you like add 1/2 c. grated cheese. Pour into hot frying pan that has been sprayed. Cook about 2 minutes at high- turn to very low and cover until set and done. About 1/2 hour.
