5 fresh cobs of corn, 1 small container blue cheese, 1 pint of cherry( or grape) tomatoes halfed, 1/2 red onion chopped, 1/2 container of baby arugula cleaned with removed stems, 4 Tbsp. Extra virgin olive oil, 2 Tbsp. Balsamic Vinegar
Cut corn directly off cob. Clean and dry. Mix with the rest of the hard ingredients and toss. Mix olive oil and Balsamic Vinegar and toss on salad. Serve cold.
