Ingredients: 2 bunches celery 8 oz. Gorgonzola cheese, crumbled 8 oz. cream cheese, at room temperature 2 tsp. white wine Worcestershire sauce High-quality Cognac or brandy salt paprika for garnish

Directions:Wash and trim the celery stalks, discarding any that are damaged or discolored. Cut the stalks crosswise into pieces about 3 inches long and pat dry with paper toweling. Set aside. In the bowl of a stand mixer fitted with a flat beater, combine the cheese and beat at medium speed until well blended. The mixture will have small lumps. Add the Worcestershire sauce and 1 Tbsp. Cognac or brandy and beat well. Add additional Cognac or brandy, a little at a time to taste; beat until spreadable. Season to taste with salt. Pipe or spoon the cheese mixture into the celery cavities, then dust lightly with paprika. Number of Servings: 12 |
