2 bunches celery
8 oz. Gorgonzola cheese, crumbled
8 oz. cream cheese, at room temperature
2 tsp. white wine Worcestershire sauce
High-quality Cognac or brandy
salt
paprika for garnish

Directions:
Directions:
Wash and trim the celery stalks, discarding any that are damaged or discolored. Cut the stalks crosswise into pieces about 3 inches long and pat dry with paper toweling. Set aside.
In the bowl of a stand mixer fitted with a flat beater, combine the cheese and beat at medium speed until well blended. The mixture will have small lumps. Add the Worcestershire sauce and 1 Tbsp. Cognac or brandy and beat well. Add additional Cognac or brandy, a little at a time to taste; beat until spreadable. Season to taste with salt.
Pipe or spoon the cheese mixture into the celery cavities, then dust lightly with paprika.

This is also tasty on crisp apple slices.
Blue cheese can be used instead of Gorgonzola.
