1 T. canola/vegetable oil
1 (4-5 lb) pork roast
8 oz beer
1 large onion (diced)
4 cloves garlic (minced)
1 T. chipotle powder (or 1 chipotle in adobo sauce)
2 t. cumin
1 t. chili powder
1 1/2 t. salt
1 t. pepper

Directions:
Directions:
Heat oil in a large skillet over high heat. Add pork and sear on each side until browned (approx. 2 minutes per side). Transfer pork to the slow cooker. Add remaining ingredients and give the mixture a stir to combine. Cook on low for 6-8 hours until the pork is tender and shreds easily with fork.

Once the pork is cooked, preheat broiler to high heat. Prepare 2 baking sheets with foil. Use a fork to shred the meat into bite-sized pieces. Use slotted spoon to transfer it to the prepared baking sheets. Reserve broth from slow cooker.

Place sheet under broiler for 5 minutes. Remove sheet and toss pork. Ladle about 1/4 c. of broth over pork. Broil another 5 minutes until meat is crispy. Remove and ladle an additional 1/4 c. of broth.
