8 medium potatoes (red or white) 1/3 c. chopped onion 1/3 c. butter 1 c. shredded cheddar cheese 1 16oz sour cream 1 tsp salt 1/2 tsp pepper
Scrub potatoes; boil for 30 min or until tender. Drain and cool slightly. Saute onions in butter until tender. Combine potatoes, onions and remaining ingredients in large bowl and mix together. Spoon into a lightly greased baking dish. Bake at 350 degrees for 30 min or until it bubbles.
