1 1/2 package graham crackers
1/2 c. sugar
1 c. butter
1 c. chopped pecans

Preheat oven to 350

Break or cut (serrated knife) crackers on section line and place in a greased jelly roll pan leaving small space in between crackers. Sprinkle crackers with pecans. In a pan, boil sugar and butter for ~ 5 minutes until amber (cooking too long will make it thick and hard to pour). Pour mixture over crackers.

Bake for 10 minutes

Cut up before cookies cool. Allow to cool, then cut again.

Recipe from Merle Mitchell. Of course, this cookie is another favorite of our family's, but especially of John Mitchell's. I usually double the recipe and use parchment paper for an easier clean up because the sugar butter mixture hardens on the pan. The recipe is easy for children to learn to bake with.
