1 # grated carrots
2 c. grated low-fat cheddar cheese
2 T. butter, cut into small pieces
3 eggs
1/2 c. milk

Directions:
Directions:
In a lightly greased 1 1/2 or 2 quart casserole dish, layer 1/3
grated carrots, 1/2 small butter pieces, and 1/3 grated cheese.

Repeat layers, ending with cheese on top.

Beat eggs. Add milk and blend. Pour over carrot casserole.

Bake at 350 degrees for 40 minutes.
