1 3/4 cups flour
2 tsp baking powder
1 tsp ground cinnamon
3/4 tsp ground ginger
1/4 tsp baking soda
1 egg
2/3 cup milk
1/4 cup brown sugar
1/4 cup cooking oil
1/4 cup light molasses

Glaze

3/4 cup powdered sugar
2 tsp apple cider
1/4 tsp ground nutmeg
1 TBS butter

Directions:

Line muffin cups with paper liners. Stir together flour, baking powder, cinnamon, ginger, baking soda in medium bowl. Make a well in the center of the dry ingredients. Combine egg, milk, brown sugar, oil and molasses in large glass measuring cup and add all at once to the dry mixture. Stir just intil moistened. It's ok if the batter is lumpy.

Spoon batter into muffin cups, filling each 2/3 full. Bake at 400º for about 15-20 minutes, or until golden in color.

Mix glaze ingredients together. If it's too thick to drizzle, thin it with more butter.

Cool on a wire rack. Remove muffins from cooking pan, and place on rack. Drizzle with the glaze, letting it drip down the sides of the muffins.

I like to make these in miniature muffin cups, and then put them on my Christmas cookie platter.
