8 medum size sweet green peppers
2 pounds ground round, drained
1 can corn, drained or 1 cup minute rice
1 small onion, diced
1 to 2 cans tomato sauce or diced tomatoes
salt & pepper to taste

Directions:
Directions:
Core the peppers, place in kettle; cover with water and parboil for 8 to 10 minutes.

In a skillet saute the beef and onion, drain off the fat. Add in either the corn or rice and tomato sauce or diced tomatoes to desired thickness.

Drain the peppers well. Stuff each pepper with the meat mixture. Pour a little of the tomato sauce over the top of the peppers and put a slice of sharp cheddar chees on top of each.

Bake 30 minutes at 350 degrees. If you have extra stuffing put it in a casserole dish and bake it. It is really good even without the peppers.
