8 ounces extra sharp cheddar cheese, grated
8 ounces medium sharp cheddar cheese, grated
4 ounce jar pimentos
pickle relish (approx. 1/2 cup)
mayonaise (approx. 1 cup)

Directions:
Directions:
Grate the cheese; mix in the pimento & pickle relish. Add the mayo. Let it set overnight as it will thicken in the refrigerator. You may need to add a little more mayo the next day. Store in containers in refrigerator or it can be frozen.
