We all love cookies. As with all cooking it improves with practice.
Have the oven at the right temperature before you put the pans in.
Cream and cream and cream the fat and sugar and eggs. An electric mixer is very helpful.
Mix your dry ingredients together well before adding.
Butter tastes best, but solid margarine works well. Have it at room temperature before you begin.
Watch the baking carefully as cookies can burn easily.
Remove from baking sheet immediately and cool on racks. Store in airtight containers, keeping the flavours separated as they can transfer.

My Mother, Edith Ann, made the best cookies ever. she didn't have an electric mixer but instead had a couple of neighbouring kids who would come and take turns stirring. She didn't have an automatic over, either, but she controlled her wood-burning cookstove beautifully. We used to tease her that she sat right inside the oven so she could bring out the cookies at the right moment.
