Fresh green beans, snapped fatback or country ham onion salt and pepper
Parboil the green beans for 10 minutes. Drain. Saute fatback in kettle; add in chopped onion and brown. Add in drained green beans; salt & pepper to taste. Cover with approximately 1 1/2 cup water. Cook on medium heat for 30 to 45 minutes.
