1/2 pound of beets,trimmed of greens
2 tablespoons balsamic vinegar
coarse grained salt
black pepper
sugar

Directions:
Directions:
preheat oven to 400 degrees.place beets in small baking dish.add water to reach one quarter of the way up sides of beets.Cover tightly with foil.Bake 1 to 11/2 hours,until fork tender.when beets are cool enough to handle trim off any funky remaining stems or root nodules and under running water rub off skins.cut beet into bite size pieces and place in small bowl.Add vinegar,sugar(to taste) salt and pepper.toss to coat evenly.taste and adjust seasonings you can use more balsamic vinegar if needed.chill

These will keep up to a week in the refrigerator.The beets can also be cooked in a pressure cooker until tender,it's a little faster.
