2 cups cooked rice
1/2 cup oil
2 cans cream of mushroom soup
1 jar pimento, diced
1 onion, chopped
1 - 4 ounce can mushrooms, drained
1 1/2 cups grated sharp cheddar cheese

Directions:

Mix together; bake in 7 x 11 baking dish at 350 degrees for 45 minutes. Serves 4 to 6.

Can make ahead and refrigerate unbaked.
