2 cups cheddar cheese
3 oz. cream cheese
1/4 c. shredded carrot
2 tbsp. red onion, minced
1 tsp. lemon juice
1/4 tsp. dried dill weed
1/2 c. salted peanuts, crushed

Directions:
Directions:
In a medium bowl, with a wooden spoon, combine all ingredients except peanuts. With moistened hands, gently form 12 balls, each equal to 1 level tablespoon of mixture. Serve or refrigerate, covered with plastic wrap, up to 2 days. Or form one large ball. Roll ball(s) in crushed peanuts before covering with plastic wrap. Serve with crackers.
